Automated Product Quantity Counter with Recurring Reset

I want to be able to display an automated counter on my pages that shows the remaining quantity of a product (e.g., 8 spots for a training) instead of a time countdown. Ideally, this counter should be able to reset automatically every two months to manage recurring cohorts without manual intervention. Currently, I have to update the number of spots manually after each registration.
